Yellow Rat

A Poisoners Cabinet creation this week with Nicks variant of the White Rat.

The unique to science Yellow Rat!

2oz Gin
¾ oz Dry Vermouth
½ oz Triple Sec
½ oz Maraschino
¼ oz Suze
Dash of Orange Bitters
Dash of Lemon/Yuzu Bitters

Stir everything with ice and strain.

It’s really good!!! Very pleased with this indeed, the original White Rat calls for Amer Picon, a French herbal liqueur that I do not have.

Reading up on this mystery ingredient it was described as having a bitter, citrusy, gentiany flavour. Suze thought I! and that along with some citrus bitters makes a most delicious drink!

Give it a mix if you can, or maybe you have a bottle of Amer Picon lurking in the back of the cabinet and fancy an original White Rat.
