This would have been a fab cocktail if I had made it correctly, definitely worth giving a go for the colour alone, it looks amazing!

1oz Saffron Gin

½oz Lemon Juice

½oz Honey Syrup

Champagne

Shake with ice and strain into a very fancy glass then top with the finest of champagne! (Or any sparkly wine you have to hand). Garnish with a star anise, (which I thought I had, but didn’t).

The saffron gin is easy, a few strands of saffron in a bottle and leave to infuse for a day or two. It doesn’t impart much flavour but the colour is stunning.
