tipsy pig

 

The excellently named Tipsy Pig, a true bacon based cocktail.

It does require a bit of prep work, not sure if it’s really worth the faff?

½ oz Bourbon

½ oz Bacon Brown Sugar Simple Syrup (recipe follows)

½ oz Sweet Vermouth

3 Dashes bitters

For the syrup:

Put equal parts streaky bacon, brown sugar & water in a small saucepan, and over a medium heat cook until lightly boiling. Remove the candied bacon and strain the syrup to get rid of the fat. Set aside and let cool.

For the finished drink shake everything over ice and pour into a tumbler over a single large ice cube. Garnish with a candied bacon piece and a maraschino cherry on a pick.

It smells more bacony than it tastes and it is very sweet. It’s not unpleasant, but not one that will join my Friday drinks list!
