Rattlesnake

 

This Rattlesnake needed a bigger bite!

It was perfectly pleasant, if a little safe for our tastes. Though it is well known that I prefer the spirit forward cocktails (still my favourite phrase) - If it doesn’t make your eyes water then what’s the point eh?

1 ¾ oz Rye Whiskey

¾ oz Lemon Juice

½ oz Muscovado Syrup (I used agave)

1 egg white

Absinthe rinse for your glass.

Shake everything with ice, strain back into your shaker and get rid of the ice and shake again (dry shake) before straining into your glass.

Once your foamy layer has settled drop angostura bitters on the top and then run a pick through making a snakey pattern in the foam! (Or fang marks as Sinead pointed out)

I will try this again dialling down the sugar, and maybe giving the absinthe a small bump up to increase the bite.

If you are sensible and prefer a cocktail that doesn’t set out to make you cry then I urge you to give this a go, I am quite sure many people will find it entirely delightful.
