Angel’s Draft

Now whether said angel was simply wafting around a bit, deep into the blueprints for some heavenly scheme or simply pulling a pint we shall never know.

1 ½ oz White Rum

¼ oz Yellow Chartreuse

½ oz Lime Juice

¼ oz Agave Syrup

¼ oz Egg White

3 Mint Leaves

1 dash Grapefruit Bitters

With the egg white this requires your double shake. Shake everything with ice, strain back into you shaker and then shake again without the ice (dry shake) before straining into your glass.

I very much recommend making two of these at a time, a ¼ oz of egg white is near impossible to get out of an egg, so just double up. Much much easier.

We both very much enjoyed this, it’s always a joy to sneak a little chartreuse past Sinead, but it is not at all overpowering unlike some of the others I’ve subjected her too. Also, grapefruit bitters, definitely worth a bottle - beautiful in a G&T too!
