old fashioned
A most deliciously classic cocktail this week with the Old Fashioned. ⠀

BUT!⠀Not just any Old Fashioned, but one made with fat-washed bourbon. The experiments will never cease in the Poisoners Cabinet!⠀

I was sceptical that the fat wash would make such a difference, but I was definitely proved wrong! It makes a noticeably smoother and silkier drink.⠀

There are endless variations on the Old Fashioned. This is how I made mine.⠀

One brown sugar cube⠀
2 dashes Angostura Bitters⠀
1 ½oz Bourbon (fat washed or otherwise)⠀

To make the fat washed bourbon, I used bacon fat, but you can use other fats. ⠀
I cooked up a of pack of bacon for half a bottle of bourbon.⠀
Add your bacon fat to your bourbon and leave it to infuse. I left mine overnight, some books say 4 hours, some say a week, more experiments are needed to confirm! ⠀
After your done infusing strain the fatty bourbon through muslin into a clean bottle, I put mine through 3 times to get rid of all the bits!⠀

For the Old Fashioned..⠀

Add your sugar cube to the glass and dash the Angostura onto it so the sugar absorbs all the bittery goodness.⠀

Give the sugar cube a smash with a muddler and add a big cube of ice. Give Everything a good stir so the ice melts a bit and the sugar dissolves.⠀

Add your bourbon and give everything a final stir to combine.⠀
