Negroni week may be well and truly behind us but the fantastic variants keep on coming.

2 oz Havana Club Rum

1 oz Campari

1 oz Sweet Vermouth

2 dashes Mole Bitters

Stir everything until beautifully chilled and pour over a chunky bit of ice.

I waxed lyrical over the hints of bitter chocolate & spice while Sinead sniggered into her glass, the Mole bitters make such a difference, I can’t wait to try them in other drink. An Old Fashioned would be amazing I think!

They are a bit of an outlay but I think a bottle will last years.

Give it a go, I think it would be perfectly lovely without the bitters, but they take it to a whole new level!
