Matchstick Sazerac

Very possibly wildly carcinogenic but it tasted dam good!

We have done Sazerac variations before and they have never failed to disappoint both Sinead & I loved this and I hope you will too!

2 oz Scotch Whisky (I used Monkey Shoulder as it was in the cupboard)

½ oz Bourbon, or Rye if you have it!

¼ oz Sugar Syrup

1 dash Angostra Bitters

1 dash Peychauds Bitters

Absinthe in a small spray bottle

You will need matches and a non flammable surface (I used a candle holder).

Give you glass a spritz with the absinthe, if you don’t have a small mister bottle, pour a little into the glass and swirl it round to coat the inside. Light a match and let it burn for a few seconds and then place it on your candle holder, cover the match with your upturned glass, the flame will quickly go out due to the lack of oxygen but the smoke will be trapped and will infuse the inside of the glass.

While the smoke is doing its thing, get the rest of your ingredients together in a mixing glass with ice and stir until nicely chilled.

Take your smokey glass and place a single large cube inside, you will still have the smoke swirling round inside and pour in your mixed drink. If you our slowly you will get a beautiful effect of the smoke eddying over the top of the drink, but alas it quickly dissipates and by the time I’d handed it over to Sinead for a picture she was wondering what all the fuss was about.

The smoke adds a little spike at the back of the drink that I really like, it’s not horribly acrid, but you know it’s there. If you didn’t fancy the faff of the smoke then it is still a really great drink!
