The french Pearl

 

A drink that I loved & Sinead was ambivalent about, so I stole hers.

2oz Gin

¼oz Absinthe

¾oz Lime Juice

½oz Sugar Syrup

5 mint leaves

Shake everything with a lot of ice and fine strain into a chilled glass.

I don’t often bother with chilled glasses and the like as I don’t have the freezer space, but in this case chuck an ice cube in the glass before you start mixing, it does make a difference.

I absolutely loved this and it will definitely make it onto my regular tasty drink menu, but I appreciate that absinthe is acquired taste.
